So it may sound gross to some, but I've developed quite a fondness for eating the albedo of citrus fruits. The albedo is the thick white part of the skin (not just the stringy white part.....the thick bit!).
Anyway, I've read where it contains a lot of nutrition, but does anyone know the macros? I would assume it's mostly carbs, but don't want to overload on fat....
Thanks for any input!

From what I understand, technically the pith is the thin white stringy stuff and the albedo is the thick white part. But yes! I love it, too! To think of how much I composted over the years when I could have eaten it ....my favorite is probably from minneolas. It's a bit different from each citrus variety.
I am not sure what that is? Is that the pith in the skin? I love the pith of orange peels. I am not quite sure of nutrition data on that, but its consistency is similar to that of bananas. At least it is a great energy source.
