i think most of the time the gluten thing is BS. I think most every day people who remove gluten from there diet have improvement cause it included removing cup cakes and BS from there diet too since gluten is in so much stuff. If i removed all the garbage out of my diet i'd feel better as well or a lot of the garbage anyhow.
But then there is the rest of us.
I really dont eat gluten much at all. once in a blue moon i eat some pasta. But I did make the mistake of making a vegan pizza a couple weeks ago with a high gluten bread flour on the crust and I just went for it and hucked the recipe's amt of salt(yeah i know i ddint want too it was a momentary lapse of judgement) I ate the whole dang thing it had a teaspoon of salt in that crust. I was dien for days. My next days run was aweful inflamation all in my joints etc.. Salt? Gluten? both? I dunno but I wont ever do that again!.
I try and eat gluten free pastas when i do but like i said once in a blue moon i'll eat one with it but i dont ever notice any issues when i do.

how have i furthered your point? is your point that you should eat as if you have celiac? just assume it without reason?
My guess is that i have celiac, but i would much rather live my life without caring if something contains gluten or not.
some people with celiac notice no problems at all. maybe your friend has celiac.
The research cited there only says it affects celiac people.
