I know stress is not good and to be avoided at high levels. Heart disease increase at more than 30 hours a week, but sometimes it can not be avoided. I'm in an intensive course right now in addition to work, so working easily 65 hours per week and it's definitely effecting my appetite.
I can't stop eating! I have been eating more fats as it's helping me feel more calm (multiple avocados, nut/seeds per day). What do you eat when you are stressed? Sucks to be a stress-eater, but at least I know to avoid stress as much as possible.

I totally know what you are talking about. Stress shuts down good judgement and the temptations come strong, especially for fats and cooked comfort foods.
The best way to fight these urges is literally to stay carbed up to the max. If you are stressed, eat a ton of dates, they are the best fat-urge-fighter in my experience as they are calorie dense and satiating. If you must eat nuts, go for the small packs as they are measured. If you go for a container, you don't count and end up over eating.
When you are NOT stressed, think of the times you do get stressed and plan ahead. Work out the scenarios in your mind (mental role plays) and prepare for the urges and thoughts that will arise regarding food and equip yourself with dates and measured amount of nuts.
Of course see if you can beat the stress to begin with by practicing letting go, meditation, breathing exercises, cultivating compassion for yourself, yoga, gym, bootcamp, more sleep, hanging out with a loved one, playing with a pet, going out for a walk or a run or a bicycle ride.. whatever works best for you!
I am always confused about fat intake , eating more sugar when your body is craving fat? Please could someone explain me why fat coming from whole food is bad ?
Personnaly i heard/read/experiment (before train80/10/10) the opposite : increasing good fat intake during stress period can be good because it creates adrenal fatigue and fat is needed for hormones to be produced and increasing fat intake (slightly) can help our surrenales and maintain them in proper health ...that is what i knew and i remember needing more fat at the beginning of my Journey coming from à stressful period (perhaps i was not eating enough as well ...)
If someone can explain me why fatty whole plant food is not optimal for our health?
Thank you guys.

Increase the fruit, keep the fat intake low. Datorade gets in those much needed extra calories.
