You can turn your veggies into thin or thick sized vegetable noodles. The noodles are great raw or you can cook them to replace your regular noodles. You could also do a mix of both! Whatever your heart desires. Toss your veggie noodles with other veggies, marinara sauce or dressing and you have a wonderful satisfying meal. I personally like The Vegetti over the larger spiralizers. It doesn't consume much space in your cabinet and is very inexpensive. Bonus! But if you have the space and want more versatility, take a look at the larger variety here.
How to Use the Vegetti
To use the Vegetti, just insert the vegetable into the desired end and turn. The noodles will come out as your turn. If you choose to use larger vegetables like sweet potatoes, turnips or jicama, you will need to cut pieces small enough to be inserted into the end. Everyone seems to be going crazy with lots of creative spiralized recipes. Check out the list of healthy recipes below to add to your collection. They are perfect for summer. No heating up your kitchen! Pick up a Vegetti here.

Zoodles with Sweet Red Chili Sauce

Recipe Type: Best Vegetti Recipes

Author: Fruityliving

This is a filling dish filled with fresh veggies, tossed with a sweet red chili sauce.

Ingredients

1 Large Zucchini

Handful of fresh spinach

1/2 cup cherry tomatoes

1/2 cup sliced mushrooms

2 large artichoke hearts-chopped

1/4 cup green onion

You can make this with the red chili sauce or leave it plain.

Red chili sauce to taste.

Instructions

Spiralize your zucchini into a large bowl. Let the cucumber drain for an hour because you'll have a soup otherwise. Squeeze more liquid out if you want a drier salad. Make sure someone drinks the cucumber juice later because it would be a crime to toss it.

Peel and chop the zucchini and put in a blender.

Add 1/4 cup of the pine nuts, to start.

Add the lemon juice, being careful to keep pits out if you're squeezing straight into the blender.

Add some parsley (determined by how much you like it; I started with 3 sprigs and kept adding until it tasted "right")

Add 1/2 clove garlic or scallions, to start.

Blend and taste.

I added more pine nuts because I may have used more zucchini than Kristina did and the dressing didn't have that thick and creamy look like in the video. A total of 1/2 cup made this dressing have the consistency that Kristina's did.

Pour over the drained cucumbers and gobble it up.

If you have any dressing left (I ran out of cucumbers and am so glad I did!), save it for the next day. I put the sauce back into the blender, added 1/2 red bell pepper/capsicum and 2 pitted dates and turned it into a red sauce. This time I shredded 5 cucumbers because it tasted even better than the Rawfredo sauce

Unfortunately I didn't take a picture of it, as I ate it all up, lol. :D

ZUCCHINI "NOODLE" SALAD________

(Serves 1 person)

150g lamb's lettuce

3 medium zucchini

250g tomatoes (I used cherry tomatoes)

3 medium or large red bell peppers

1 scallion

chopped fresh herbs of your choice (as many as you wish, I used about 1,5-2 tablespoons)

1) Wash the lamb's lettuce and then chop it (as you wish) and place it in a very large bowl. Then set it aside.

2) Chop the ends of the zucchinis off. Peel the zucchini skin off (if you wish). Either grate the zucchini if you want short almost fettucini-like "noodles" (or if you don't have a spiraliser like me, lol) OR spiralise them with a spiraliser to have them longer. Place the "noodles" on top of the lettuce.

3) Chop one of the red bell peppers and toss them on top of the "noodles".

4) Now let's get saucy! ;) Chop the other 2 red bell peppers, the tomatoes (but if they're little you won't need to chop them) and the scallions. Toss them all along with the herbs in a mixer/blender and blend until smooth.

5) Pour the sauce on top of the "noodles", red bell pepper and lettuce. Mix all the ingredients together and enjoy. :)

It can also be used to replace rice.

My Tabouli salad had only 3 ingredients: 1 medium zucchini, more or less than 10 cherry tomatoes, scallions/parsley.

Dice the tomatoes, finely dice the zucchini, and thinly slice the scallions. Mix all ingredients to combine. If you're patient, you can let the salad sit for about 10 more minutes and it'll taste even better. I wish I could pic a picture up, though. Anyways, Enjoy!

Its colourful and juicy - so it doesnt need any other dressing. I like to chop the greens really small, somehow I find them easier to eat this way. Great one to contribute to shared dinners.

Spiralise 2 Lebanese Cucumbers and 1 Zucchini (depending on size). Add finely chopped red capsicum. Add finely chopped spinach and/or iceberg/cos lettuce. Add finely chopped fresh herbs. My personal choice is mint and sometimes basil. Add a chopped orange and a chopped mango. Toss all together. I like to use my hands for this bit :)

Yum!

Alison

I added sliced frozen strawberries on top (so that they would melt and create another little layer of sauce, but you could easily use fresh ones, or whatever fruit you like) and used agave nectar because my blender hasn't been working so well and I haven't been able to make a good date-based liquid sweetener. But that would work just fine, too. In any case, it was super fantastic. I took it to a vegan potluck and everyone thought it was so pretty (and delicious, of course).

Anyway, just cut about a 3" round from a watermelon and cut the rind off. You can make a second, smaller tier, if you want. Put the fruit on top of both your tiers, if you're doing it that way. Mix your sweetener and some lime juice (you're going to have to eyeball it, due to differences in watermelon size and cake size - make sure to taste-test a couple times too, but don't worry about it too much, as it's a pretty mild glaze anyway) and pour over the top.

Boom! You have a super cool watermelon cake to show off or just devour by yourself. Yum.
