Hey guys, any suggestions/recipes for coconut meat? I am buying up coconuts for their water as it helps me keep up my water intake! I mix about 1/3 CW to 2/3 Drinking Water :-)

But as the meat is so fattening (80%) we can't use it/eat it fast enough, and my freezer is full. Yes we will one day buy a nice big freezer and label it COCONUT MEAT, :) ..but in the meantime...? J x

  • I keep it it the freezer-- I plan to use it for a birthday raw "cheesecake" or something. You could blend little bits into your smoothies for a treat, too!

  • compost! :D

  • I ate a young coconut the other day and did some research to find out its nutritional value since its not in cronometer (only the info for mature coconuts is), I think a lot of people get confused because they don't realize there is a difference. From what I read on a few sites, the young coconut is more digestible and has way less calories and fat, unlike the mature coconut which has the majority of its calories from fat. Heres a recpie that uses it https://www.youtube.com/watch?v=XJkFTQKYlP0, you can also put it in smoothies or make coconut "yogurt" https://www.youtube.com/watch?v=VC1mxhSMB5o.

    • The jelly has less fat than the mature meat, but not very significantly less. But it's a lot more enjoyable to chew and eat than the hard stuff

    • yeah, overall young coconuts usually have less fat. Depends on the coconut though. The softer more jelly-ish ones have less fat
  • Thanks, I may try that too! J

  • Thank you, this sounds delicious! J x

  • Yes that's a very good idea! Thank you! J

  • Blend it up and use it as massage oil.
