I've since brought this to a few dinner parties and It's generally been well received, but few people said too sweet.

There are astringent and non astringent persimmons. I'm assuming you were seeing the astringent ones. They probably had a vague heart-like shape to them.
Regardless, you eat them both when they've become very soft. The inside should be gel-like.
They generally ripen when bought hard.

I'd love to try a chocolate persimmon. That sounds AMAZING!!!
Give thanks for the post.
This Pie looks so good!!
Yeah, Ashley persimmons can take a while to ripen.
I know that there is a kind called sharon which are still
in season in certain parts of the US. I don't think the other
well known kinds of persimmons fuyu and hachiya are in season
at the present.
speaking of persimmons, does anyone know how much longer they are in season here in the U.S. ? Gah, mine havent been ripe for weeks! GRRRR.
I love sarah's persimmon pie....... its just persimmons and dates! But this one looks DELICIOUS as well!!! I'll have to try it if i ever have ripe persimmons!!!
