I made this soup with several simple vegetables (picture attached), but it's turned out too watery. It's like there is nothing holding the soup together. I used potatoes, broccoli, cauliflower, carrots, celery, onion, garlic, bay leaves, and water. Any suggestions?

Hi. If you want your soup to be less watery you can: add some mashed potato; add rice flour during the cooking; start your soup with amaranth and when its ready add veggies, or add amaranth flour; or even add altogether. Also less water would help too. I hope it helps. have a good day.
cooked and pureed potatoes and mushrooms make my veggie soups nice and thick.
Add barely which should thicken it up.
I often blend half of the soup and add it back in with unblended soup to thicken.
