The 3926TB is plain black and is $299 ($100 cheaper and also on Amazon). The one you referred to is Twilight Black and comes with an extra book (maybe the reason for the higher price?)
There's also the 3900B which is even cheaper at $249 but doesn't have a timer, which you can buy separately at most hardware stores if you're looking to save an extra few bucks.
Regarding Excalibur, I agree I've heard it's the preferred model for both size and air distribution technology (even dehydration) and from customer reviews these 9-tray models are the way to go. Don't forget the ParaFlexx Premium sheets for liquid stuff, also recommended for crackers and the like. You should be able to find them for maximum $7.50 a sheet.
