For dinner I made potato corn chowder VEGAN style. I was gonna use almond milk to thicken it but then I had a genious idea. rather then veggie broth I just used water. I put in potatos onions garlic mushrooms corn pepper and some carrots and celary. Then I put just a table spoon of corn starch but I used maseca corn flower to thicken it the rest of the way this gave it a really nice southwestern style flavor its really nice. If I couldn’t find corn flour I’d use corn meal but that might be too gritty. No fat high carb totally vegan!!
its really tasty and filling and its really thick and hte thickness isnt creamy fat! but starchy from the corn flour. has an over all corn taste to it really tasty. It'd be good topped with fresh tomatos or jalepenos if you want some heat.
